About Spainhour Nutrition Therapy

Nutrition care grounded in science—and centered on you.

Spainhour Nutrition Therapy is led by Stephani Spainhour, MS, RD, LD—a clinical Dietitian with experience in hospital, outpatient, and research settings. Her work bridges evidence-based medical nutrition therapy with compassionate, and individualized care, so you can feel confident that your treatment plan is both scientifically backed and truly sustainable for you.

Stephani received her Bachelor's degree in Nutrition and Dietetics, as well as her Master's in Nutrition and Dietetics from Texas Tech University. While at TTU, Stephani participated in nutrition related research, focusing on Nutrigenomics, furthering her understanding of the delicate balance between nutrition and physiology. She completed her rigorous, clinically focused Dietetic Internship at Texas A&M University (Gig em, Aggies!), and continues to stay active in the research realm.

Major Clinical Focuses

Stephani’s clinical focus includes metabolic, inflammatory, and other chronic disease states requiring medical nutrition therapy, such as:

  • Diabetes, pre-diabetes and other metabolic condition.

  • GLP-1 therapy specific nutrition intervention.

  • Gastrointestinal diseases/disorders (IBD like Chron's or Ulcerative colitis, liver disease such as NAFLD or cirrhosis, celiac disease, and EoE Eosinophilic Esophagitis).

  • Malnutrition and enteral nutrition (tube feeds).

  • Disordered eating patterns and nutrition concerns related to mental health.

She partners closely with your existing care team—physicians, therapists, and specialists—to ensure your nutrition plan supports the whole picture of your health.

Stephani works with both adult and pediatric pateints.

This is NOT an all-inclusive list.

IMPORTANT: If you have concerns for eating disorders, or have a current active diagnosis of an eating disorder, interdisciplinary approach is pivotal to long term success. If you do not have a PCP (primary care physician) AND a mental health provider, please let me know in the intake. I want to do my absolute best in providing ethical and well-rounded care. Referral to alternate/other providers is necessary for these conditions.

Mission & Values

Science-led. Tailored for you.

Rooted in partnership.

Spainhour Nutrition Therapy exists to provide evidence-based, weight-inclusive, nutrition care for people navigating complex health conditions. Stephani’s mission is to help you move away from confusion, fear, and conflicting advice—and toward clarity, confidence, and sustainable change that lasts through your life and as you change.

Evidence over trends

Care is grounded in peer-reviewed research, clinical guidelines, and years of real-world practice—not in fad diets or one-size-fits-all approaches. Stephani continually updates her approach as the science evolves.

Collaborative, not prescriptive

You bring lived experience, values, and goals. Stephani brings her clinical training and a structured process. Together, you co-create a plan that feels realistic and respectful of your bandwidth, your families needs, culture, and preferences.

Inclusive, well-rounded care

Food is never just food. Stephani acknowledges the impact of weight stigma, medical trauma, and past dieting/wellness experiences. Sessions move at a pace that feels safe, with room for nuance, flexibility and complexity.

How We Work Together

A structured, supportive process.

Every client journey is individualized, but most care at Spainhour Nutrition Therapy follows a clear, collaborative structure:

  • Comprehensive assessment – medical history, labs, medications, symptoms, relationship with food, and priorities.

  • Collaborative goal-setting – defining what meaningful change looks like for you or your child in your current season of life.

  • Tailored care plan – nutrition interventions, education, and tools designed around you or your child's diagnosis, preferences, and capacity.

  • Ongoing adjustments – regular follow-ups to track progress, troubleshoot barriers, and adapt as health evolves.

A Note from Stephani

You are more than a diagnosis or a lab value.

"I started Spainhour Nutrition Therapy because I saw the gap between what we know from research and what many people actually receive in nutrition care. Too often, patients are given generic handouts, oversimplified advice, or rigid plans that don’t account for their lived realities.

My goal is to create a space where your medical history, your relationship with food, your culture, your support system, and your nervous system all matter. Where we can talk honestly about what’s realistic, what feels supportive, and what you’re ready for right now.

If you’re feeling overwhelmed by conflicting nutrition advice or discouraged by past experiences with healthcare, you’re not alone—and you’re not behind. We’ll start exactly where you are and move forward together".

With care,
Stephani Spainhour, MS, RD, LD
